Welcome inspiring chefs! I have just received word from mayor Bloomberg’s office. He is at his wits end trying to find a resolution to a very serious matter. The debate over the use of trans fatty acids in food preparation has sparked great concern in our community. You have been chosen to carry out high priority research on this extremely controversial topic. Exactly, two weeks from today the mayor and his council will meet here at the culinary institute in order to gain further insight on this issue. We are depending on your team to thoroughly investigate this matter. You will need to examine this issue from all vantage points and present your findings to the mayor. In return the institute will receive a generous donation from the city which will contribute toward the construction of our new “Emeril Lagasse wing”.
